I wrote a cookbook! Plus, a Blistered Tomato + Whipped Feta Flatbread
I WROTE A COOKBOOK. It feels really weird/amazing typing that because I think throughout this entire process my brain tricked me into a state of denial, but it’s here! File that under unexpected happenings in my world in 2020. If I could go back in time and tell my kid self that I would get to write a cookbook, I’d like to think she’d be insanely stoked. Adult me sure is!
A little bit about my book! It’s called The 30 Minute Pescatarian Cookbook, and it’s full of 95 super easy, healthy recipes heavily inspired by growing up in California and my Northern Italian/Portuguese upbringing. So, lots of Mediterranean vibes! This book is in no way just for pescatarians- Let’s remember here, I’m a full-on omnivore. My mission for this book is to showcase produce and seafood in a fresh, approachable, really delicious way, and I’m pretty confident you will find something you’re into whether you classify as a vegetarian, pescatarian, or if you reside in my omnivorous neck of the woods. I can’t wait to share many, many more recipes and tidbits with you over the coming weeks, but today, I’m kicking things off with what is becoming a fast favorite…Flatbread With Blistered Tomatoes, Whipped Feta, and Lemony Greens.

It’s incredibly heartwarming to know you have people in your corner, cheering you on, even somewhat enjoying what you put out into the world. There have been so many times over the last few years where I called into question what and why I do what I do/whether I am even equipped/worthy of doing it. It’s really hard to put into words what this experience has meant for me. I’m just really really glad you’re here.
